Shrimp Scampi with Pasta
Ingredients:
- 1 pound linguine pasta
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 4 cloves of garlic, minced
- 1 pound of large shrimp, peeled and deveined
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes
- 1/2 cup of white wine
- 1/4 cup of freshly squeezed lemon juice
- 1/4 cup of chopped fresh parsley leaves
Instructions:
- Bring a large pot of salted water to boil. Add linguine pasta and cook according to package instructions until al dente.
- In a large skillet, heat olive oil and butter over medium heat until butter is melted. Add minced garlic and sauté until aromatic. Then, add shrimp and season with salt, black pepper, and red pepper flakes. Cook until shrimp are pink and cooked through, about 2-3 minutes per side.
- Add white wine and lemon juice to the skillet. Simmer for about 2-3 minutes until the sauce has slightly thickened.
- Drain pasta, and add it to the skillet with the shrimp and sauce. Toss well to combine.
- Add chopped parsley to the skillet and toss again. Serve hot with a sprinkle of parmesan cheese.
